Let’s get some insights about diet choices people make and how these choices impact air and water quality, land usage and health. You can do a few things that will provide some great content for our senior writer and media specialist. 

  • One is to volunteer at a food organization or a soup kitchen for 3 hours or more.  Where do they get their food?  What do their clients like?  What do they make?  Your observations?   Are there implications for health?  The environment?
  • Or if you prefer, community-supported agriculture (CSA) is a relatively new and interesting model of food production and distribution that we should know more about.  Visit or volunteer at one of these farms in the area and find out what you can about why the community may want to be involved.   How does this model impact the environment?
  • Another assignment: assess your diet and exercise habits for one week.  Jot down info in a matrix, keeping track of what you eat daily and what you do for exercise.   Since excess fat is related to diseases such as diabetes, heart attacks, strokes and colon cancer, and children in the US are now 42% fatter than in 1980 – it’s time for us to raise awareness that healthy diet and exercise habits can impact individuals and society.  How do your food choices impact the environment?
